Parboiled rice derives nutrients, especially thiamine, from the bran into the grain turning the parboiled white rice nutritionally similar to brown rice. The process of parboiling itself is more than two thousand years old and believed to have originated in the Persian Gulf.

The starch in parboiled rice becomes gelatinized, making it harder and glassier than other rice. Parboiled rice takes less time to cook, and the cooked rice is firmer and less sticky.
