Recipe Method : INGREDIENTS:
- 1 cup - Basmati Rice
- 1 cup – Peas
- 1 cup – Chopped Radish
- 1 - Onion
- 2 to 3 - Cloves Garlic
- 1 - Bay Leaf
- 1 tsp - Cumin
- 4 to 5 - Cloves
- 1/2 tsp - Whole pepper
- Toasted Cashew nuts for garnish (optional)
- Sprigs of Cilantro and Mint for garnish
- Salt to taste
RECIPE METHOD:
- Soak the rice for 30 minutes in water.
- Heat some butter/ghee/oil in a non-stick pan and sauté chopped onions along with bay leaf, cloves, pepper, garlic and cumin.
- Once the onions get soft, add the drained rice and sauté for another 3-4 minutes till the rice becomes light pink.
- Add 2.5 cups water and salt, mix well and then close the lid and cook for another 5-8 minutes till the rice is 80 per cent cooked.
- Add the peas at this point and mix it gently along with the rice.
- Cook for another 5 minutes until done.
- Garnish with cashews, mint and cilantro.
- Serve hot with any side dish from simple raita to rich dishes like shahi paneer.
